Stuffed Chicken Breast




Ingredients
  • 500gm Boneless Skinless Chicken Breast
  • 1 Cup feta Cheese or paneer
  • 3 tablespoon yogurt
  • 1/4 Cup Mozzarella Cheese - grated 
  • 1/2 Cup Spinach
  • 2-3 Cloves of Garlic
  • 1/2 onion finely chopped
  • Freshly chopped coriander/parsley/basil
  • 1 tsp black pepper
  • 1 tsp hot red pepper flakes
  • Salt as per taste
  • Bread crumbs 1cup
  • Oil for deep fry
Method
  • Flatten the chicken breast with mallet (up to 1cm thickness)covering with a foil.
  • Marinate chicken breasts in yogurt, salt & pepper.
  • Leave chicken to marinate for 30 minutes.
  • Mix paneer/feta cheese, spinach, onion, garlic, chilli flakes, coriander,2 pinch of salt and  mozzarella cheese together in a bowl.
  • Place chicken breast, spray oil on it.
  • Put cheese-spinach filling on top of the chicken breast, and roll tightly, sealing the ends with toothpicks.
  • Give a good egg-white wash.
  • Then roll it into bread crumbs.
  • Deep fry in oil or bake in 180◦ c preheated oven for 30 minutes.
  • When the chicken is done cut chicken roll into thick slices and serve with fried rice or pasta.



Fish Fillet & Veggies in Lemon Garlic Sauce


Nowadays, Abhi goes crazy to make some dishes ....so here is the yummy result of his lemonee touch.

    Ingredients
1.    Fish Fillet - 2
2.    Marinade:-
1tsp Ginger Garlic Paste
salt and ground pepper - to taste
1 lemon juice
3.    Flour ½ cup
4.    2tblsp of oil for fish fry

For the sauce:-
5.    Butter – 2tbsp
6.    Chopped garlic – 2tsp
7.    Lemon Juice – 2tbsp
8.    Lemon zest 1tsp
9.    Parsley/coriander leaves chopped - 2Tbsp
10.  Vegetables like carrot, cauliflower, beans (cut in 1” size)
11.  Vegetable/Chicken stock - 1cup
12.  2tsp corn flour mixed with 2Tbsp water

Method:-
·         Apply the marinade to the fish fillet and refrigerate for 10-20 minutes. 
·         In a frying pan, heat 2tbsp oil.
·         Coat the marinated fish fillet with flour and place in the hot oil. 
·         Reduce heat and let the fish cook on a medium flame for 5 minutes on both sides.
·         Remove on kitchen towels/tissue.
·         Now prepare the sauce. In a pan, heat the butter until it melts. Add crushed garlic.
·         Put in all vegetables with little salt. Cover until it soft.
·         Then add lemon jest and lemon juice.
·          Sauté for a while then add parsley leaves, and continue saute for 2-3 minutes more.
·         Add the stock to this, bring to a boil.
·          Add the corn flour mixed with water, reduce to a low flame.
·         Don’t forget to stir continuously until the sauce begins to thicken. Remove from heat. 
·         Arrange the fish fillets on a serving dish, spoon over the sauce & vegetables.
·         Serve hot with rice or garlic bread.


Soup Bread Stick



Ingredients:
  • 3cups flour
  • 2tsp sugar
  • 3/4 tsp salt
  • 11gram instant dried yeast
  • 1 ½ cup luke warm water
  • 2 tbsp veg oil
  • Egg wash: 2 tbsp beaten egg + 1 tbsp water (vegetarian can use warm milk with sugar as a wash)
  • Garnish: Sesame seeds
Process:
  • In a bowl, add the yeast and sugar with luke warm water. Set aside for 5 minutes. 
  • Then in a big bowl mix this together with the flour & salt.
  • Cover the bowl with plastic wrap or wet cloth and keep at  warm place  to rise in volume for more than one to two hours.
  • Take lime sized balls out of the dough and shape it like thin sticks.
  • If you want you can give shape by twisting or curving or you can keep it plain.
  • Greased baking tray with veg oil.
  • Put the strips on the baking tray maintaining I inches gap in between.
  • Close with a wet muslin cloth and keep aside for 1/2 an hour for second rising.
  • Pre heat the oven with maximum temperature.
  • Apply egg wash with brush on top of the sticks.
  • Garnish with sesame seeds.
  • Bake this for 8-10 minutes and reduce the temperature to 100C.
  • Turn the sticks gently once and bake till golden brown and crisp. Let it cool.
  • Keep in dry air tight containers.

Chocolate Cake Pastry


I just wanted to give a trail of cake pastry as Abhi asked me to make it at home. I was in big dilemma if I could make it as moist as in shop. I am a newbie in baking & not ashamed to admit it. Sooo mission of  surfing started  to get the best one. Thank you to “bestmoistchocolatecakerecipe.com”. The result was pretty good & the cake is absolutely moist & deliiiicious. He was extremely excited that helped me for frosting the cake & at last gave a top touch of walnuts which make it rich in flavour. Now here we go……for my best cake ever I made.
 Ingredients
  • 2 cups all purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • ¾ cup of unsweetened, cocoa powder
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup buttermilk (you can make it at home. Mix 1teaspoon of lemon juice/vinegar to 1 cup of milk. Wait for 10-15 minutes. It is ready)
  • 2 teaspoon of vanilla extract
  • 1 cup of prepared plain hot black coffee/ hot water (don’t miss this ingredient)
  • ¾ cup of  black coffee make with 1tsp of sugar

For frosting
  • 1 1/2 cups heavy or whipping cream 
  • 5 tbs. granulated sugar 
  • ¼ cup cocoa powder 
  • Chopped wall nut or any nut for decoration

Method
Generously grease and flour 9 X 13 inch pan
Preheat oven to 200degree C.
In a medium bowl, whisk together flour, baking soda, baking powder, cocoa powder and salt. Set aside.
In a large bowl, combine the sugar and vegetable oil.
Mix in the eggs, buttermilk, and vanilla until combined.
Combine the wet ingredients with the dry ingredients a little at time, mix & just combine.
Now stir in the hot coffee & combine.
Pour the batter evenly into pan.
Bake for 1hr, or until a toothpick comes out clean. No need to over bake as cake will continue to cook as it cools.
Let it cool outside the oven.
Slide a knife or shaslik inside the cake. If it comes clear that mean it is done.
Remove the cake from the pan and let it cool completely. Remember, if cake is warm then u can not apply frosting. It will run away from your cake. So have patience.
By the time frosting can be prepared. For making frosting you have to chill all the frosting ingredients keeping inside the fridge. Then mix first two ingredients in a chill container & beat with hand beater (I have manual one) till it is firm. It is really a hard work.
After soft peaks form, add 1/4 cup sifted unsweetened cocoa powder. Whisk by hand until the cream is smooth and stiff peaks form. Let the cream sit in the refrigerator for at least 1 hour to dissolve the cocoa. Whisk briefly before using.
Very carefully cut the cake from middle to make two layers. Separate the layers.
Pour the black coffee on both the layers.
Now frost the bottom layer. Then slowly put the top layer on it. Decorate the top with frosting very carefully.
 Spread chopped wallnut or any nut on the top if you wish.
It is really the super moist cake, you can make at home, I sway…….

Pizza


Pizzaaaaaaa. Yes, few weeks back while seeing any pizza outlets that sound used to come instantly. Now as per my husband’s opinion best pizza can be made only at home. Because your choices are free. Double cheese….triple cheese….extra olive….whatever you want…hehehe.
Ingredients for dough:
  • 1 package dry yeast (10-12gm)
  • 1 cup water
  • 2 teaspoons granulated sugar
  • 3 cups all-purpose flour
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoons salt

 Mix the dry yeast in 1 cup of luke warm (not hot) water in a large bowl with sugar.
After 2-3 minutes, stir in the flour & salt. Knead the dough until smooth and elastic (about 10 minutes).
This dough will be very firm.
 Place in a lightly greased mixing bowl, cover and let rise in a warm place until it has doubled in size (about 2hrs). Remove cover and punch dough down.
Cover again and let rise again.
 Topping Ingredients:
  • 100ml tomato paste/ketchup
  • 1/2 teaspoon basil flakes
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon salt
  • 1tsp of black pepper
  • 1/2 cup fresh sliced jalapeno
  • 1/4 cup of sweet corn
  • 1/4 cup of black olive& 1tsp of chopped garlic
  • 10 smal cubes  of tomatos
  • 2/3 cup grated Parmesan cheese
  • 1/2 cup of Mozzarella cheese
  • 1tblespoon of olive oil (optional)

Preheat oven for 200degree C.
Make thick chapatti of the dough using roller. If needed flour can be used to roll the dough in this period .
 In a medium-sized bowl, combine the tomato paste, basil, oregano, garlic,salt and pepper. Spread the sauce across the top of rolled dough.
Sprinkle 75% of the grated and shredded cheeses on top of the sauce mixture and then place all vegetables on top of cheeses.
Again sprinkle rest of the cheese on  top of the vegetables.
Bake in preheated oven for 15-20 minutes or until done.

Fish Dill-Wale


 Heyyy, I am announcing a good news to my viewers that my hubby also got inspired to cook something for me. That day he entered into kitchen & was seeking something inside the fridge. When he was asked, the reply came that I want to cook something from heart (DILL) for you. Finally decision was taken to make SPICY FISH FRY WITH A TOUCH OF DILL(a kind of herb, sauf leaves). Here the recipe card given by him.
                
Ingredients
  • Fish fillets (one basa fillet)
  • Lemon juice 2tsp
  • Flour 2tsp
  • 1tsp of chilli powder
  • 2tsp of black pepper powder
  • 2tsp of garlic paste
  • Mustard sauce 2tsp
  • A handful of chopped dill.
  • Salt as per taste
  • Pinch of turmeric powder
  • Oil 1tblespoon for pan fry

 Method
Rinse and  dry the fish fillet.
Mix all ingredients except fish fillet & oil in a big bowl. If the paste is too thick you can use 1-2tsp of water.
Marinate the fish with the paste & keep in fridge at least 2-3 hrs.
Fry on non-stick pan till it gets golden brown colour from both the side.
Serve it with hot rice/risotto/fried rice.
 It tastes .............Oooowesome.

Lemon & Broccoli Risotto


Ingredients:
  • 1 liter vegetable/chicken broth
  • 1 tbsp olive oil
  • 1 smallwhite onion, finely chopped
  • 2 cloves garlic chopped
  • 1 1/2 cups arborio rice/atop chal if u don’t get arborio
  • 1 cup white wine
  • 3/4 cup broccoli florets
  • 1 big handful chopped bellpepper
  • Zest and juice of 1 lemon
  • Freshly ground black pepper

Method:
Pour broth in a saucepan and put over medium heat. When it is hot, reduce to low.
Heat oil in a large saucepan over medium heat.
Add onion and garlic and cook for 1-2 minutes, stirring, until onion is getting translucent. Add rice and cook for 2 more minutes.
Pour wine and cook, stirring, until liquid is absorbed. Add one ladle of broth and cook, stirring occasionally, until liquid is absorbed. Add remaining broth, one ladle at a time. When adding last ladle of broth, also add broccoli & bell pepper.

Stir in lemon zest, lemon juice and pepper. Remove from heat and let sit 3 minutes before serving.

Fruit Cake


Ingredients:
  • 225g plain flour
  • 1/4 teaspoon salt
  • 1/2tsp of baking powder
  • 1 teaspoon mixed spice (optional garam masala powder)
  • 200g  butter
  • 200g dark brown sugar (optional red jaggery)
  • 1/4 teaspoon vanilla extract
  • 4 eggs, lightly beaten
  • 300g mixed dried fruit & chopped mixed peel
  • 50g glazed cherries, halved & blanched almonds, chopped
  • 100 ml of orange juice

Method:
Dip the dried fruit, mixed peel, glazed cherries and almonds in luke warm orange juice & keep it covered in warm place for 24 hrs.
Next day you can see that almost whole juice is absorbed by the dry fruits. Heat the oven to 180 C. Grease a cake tin/container and line the bottom and sides with baking paper or give a coat of flour on greased tin.
Sift the flour, salt, mixed spice & baking powder into a bowl.
Cream the butter and the brown sugar/jaggery in a large mixing bowl and then mix vanilla extract until light and fluffy.
Mix the eggs one at a time into the mixture. Fold in the flour mixture until well mixed and then mix the dried fruit, mixed peel, cherries and almonds.
Turn the mixture into the prepared tin or container and decorate top with few nuts or cherries.
Bake in the oven for 1 hour in 180C and then test with a skewer. If the skewer doesn't come out clean, bake for up to another 10 minutes until the skewer comes out clean.
Remove from the oven and leave to cool in the tin for 15 minutes.
Turn out on to a wire rack and leave to cool.

Tiger Cake


Few days back I watched Zebra cake in a Pakistani cooking channel.  That day onwards I was thinking to make it as well as worried if it will come well or not. Somehow I managed it. But, (hehe) zebra became tiger (because my 2nd portion of batter liquefied more). As this is the first time I know I messed it a bit. Please bear with me. Next time definitely I will serve a gorgeous Zebraaaaa.
Ingradients:
  • 2 cups plain/all purpose  flour
  • 1 tablespoon baking powder
  • 2 tablespoons dark cocoa powder
  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 cup milk, at room temperature
  • 1 cup vegetable oil
  • 1 tsp vanilla essence

Method:
Pre heat the oven at 180 degree C.
 Lightly grease a cake pan or line it with parchment paper /baking paper.
In a bowl, combine flour and baking powder.
For wet ingredients in a large mixing bowl, combine eggs and sugar until the mixture is creamy. Add milk, oil and vanilla essence, and beat until well blended.
Gradually add the flour mixture to the wet ingredients and beat just until the batter is smooth and the dry ingredients are thoroughly incorporated.
 Divide the mixture into 2 equal portions. Keep one portion plain & add cocoa powder to another and mix well
 Pour 2 ladle of plain batter into the middle of the baking pan. Then pour 2 ladle of cocoa batter in the center on top of the plain batter. THIS IS IMPORTANT PART OF THE CAKE. Do not stop and wait until the previous batter spreads It will spread by itself..
Bake in the oven for about 40 minutes.
Then leave the cake for another 10 minutes in the oven.
 Do not open the oven door to avoid shrinking of cake. To check if the cake is ready, insert a toothpick into the centre.
 It should come out clean when ready. Remove from the oven. Let it cool.
Then cut it & serve. Enjoy the yummy sounds of your family members.
